Epic Tofu Scramble

One of the first things I cooked when I returned home from Fabulous California was a Tofu Scramble. It makes a great breakfast (or any meal, really) and is certainly easy to make.

Ingredients:

Soft tofu

Sliced Portabella mushrooms

1/2 small red onion

1 small-medium sized carrot, chopped

Olive oil

How you do it:

1. Rinse mushrooms, and place into frying pan with the heat low-medium.

*Use olive oil to keep the whole scramble from sticking to the pan.*

2. Slice up desired amount of tofu (start with some, and add more later if you wish). Scramble with the mushrooms.

3. Add the carrots and red onion, and scramble all ingredients. When the mushrooms begin to brown, or are very brown, remove from heat.
